in a small-medium sized pot, add cranberries, coconut sugar, and water. Bring to a rolling simmer. Cranberries will expand, crack, and soften over the course of a few minutes. Add a little more water if necessary and continue to reduce. Turn heat lower, necessary. After about 5 minutes, stirring often, add the orange zest and continue to cook for several minutes more until a chunky, thick sauce has formed. That’s all!
Allow to cool before transferring cranberry sauce to a glass container. Store in the fridge so it can firm up and thicken further.
When it’s time to serve Thanksgiving meal, transfer the cranberry sauce to small serving bowls. Garnish with additional orange zest for presentation.
Save time by making the cranberry sauce 1 day in advance. Give it a good stir when ready to transfer to your serving dish.
