Use up berries that are on their way out or just not as beautiful as they were a few days before with a homemade strawberry jam without pectin. This 3-ingredient jam is very quick to make, low in unrefined sugar, and makes a fun spread for a child’s sandwich. Pectin is naturally occurring in tart fruits and lemons, so there’s no need to add commercially processed pectin to get that nice and thick jelly consistency.

Combine ingredients in saucepan and heat over medium heat with a little boil action until thickened. This may take 5-10 minutes while stirring often.
Mash the berries with a fork when softened and continue to stir over a low boil. Once thickened and jam-like, transfer to a glass jar.
Jam will continue to thicken in the fridge.
