These quick pickled onions take no time to make and they elevate any dish or salad – that’s a guarantee! I love to throw picked onions together and top a party salad with them to add unexpected pickled crunch. You can use any color of onion.
Slice onions into circles and place into a stainless steel bowl or into a mason jar. Heat vinegar, water, salt and coconut sugar in a small pot until it starts to simmer. Give it a good stir to be sure sugar and salt are dissolved.
Pour the hot brine over the onions and add the bay leaf, then cover with compostable cling wrap or a lid to keep the heat in. Onions should soften up pretty rapidly and are ready to use when they’re soft. Less than 30 minutes! Store extra onions in the brine in fridge.
