in a small-medium sized pot, melt the butter over medium-high heat, then stir in the flour, and whisk into the simmering butter constantly until browning and thickened. If using a ceramic, nonstick pot, use a soft silicone spatula to stir constantly. This should take 2-3 minutes.
Gradually, drizzle in 2 cups chicken or turkey stock, as the mixture should start to thicken. Continue to drizzle in more broth, over medium heat, while maintaining a somewhat thick consistency. Allow to simmer for a few minutes if it becomes thin in order to reduce and thicken up again. If you are making the gravy in advance, reserve the last cup or 2 of broth until the day of, when you add the turkey drippings in. If making gravy while the turkey is resting, add several large spoonfuls of the turkey drippings (fat, chunks and juices), one spoon at a time, to the gravy and stir constantly over an active simmer. Watch for the gravy to thicken before adding more broth.
When gravy is to desired consistency, taste to see if it needs salt. If so, season to taste with salt.
Pour the hot gravy into gravy boat when ready to serve Thanksgiving meal.
Save time by doing this the day or several days in advance: make the gravy base. Follow steps 1 and 2. For the gravy base, add no more than 2 cups of stock, reserving additional stock for the day of Thanksgiving, if needed to thin out the gravy or make additional gravy when adding the turkey drippings.
