In small to medium pot, melt the coconut oil. Turn heat off and add the almond butter. Stir until smooth. Next, add the honey, vanilla and salt and stir until smooth. Lastly, stir in the shredded coconut until well combined.
Line a 9×9 cake pan or similar sized baking dish with unbleached parchment paper. Pour the mixture into the dish, then transfer to freezer for at least 30 minutes. Remove from freezer once solid.
Pull the paper out of the dish and transfer to a cutting board. Immediately cut into pieces with a large chef’s knife. Start by cutting the large square in half, then turn the board and cut into half again. Continue cutting into smaller, thin rectangular pieces, just like Honey Mamas. Once you have all of your pieces, transfer to a large storage container and store in the refrigerator.
These Honey Mamas will get softer if left at room temperature, so it’s best to serve and enjoy directly out of the fridge.
