Stuffing is a traditional side item at Thanksgiving, but many times it’s a dried out, white carb, missing flavor. Not with this flavorful and hearty stuffing recipe! Make ahead to save time, if you want, and bake on Thanksgiving Day. This stuffing uses our whole grain sourdough bread and is moist, with a chewing filling, and crisp crust. Gobble, gobble!
Stuffing is a traditional side item at Thanksgiving, but many times it’s a dried out, white carb, missing flavor. Not with this flavorful and hearty stuffing recipe! Make ahead to save time, if you want, and bake on Thanksgiving Day. This stuffing uses our whole grain sourdough bread and is moist, with a chewing filling, and crisp crust. Gobble, gobble!
Dry out the bread cubes. Preheat the oven to 350℉. Place bread cubes on a large baking sheet and bake in the oven for approximately 30 minutes, using a spatula to move the cubes around every 5 minutes during this time. Bread cubes should be crisp like a crouton when done.
While bread is drying out in the oven, make the sauce. In a large saucepan, melt the lard and butter. Add the sage and stir over medium heat for 30 seconds until fragrant. Add the chopped onion and allow to cook over medium heat, stirring frequently so it doesn’t burn, until softened and becoming translucent. Stir in the garlic, parsley, thyme, rosemary, salt and freshly cracked pepper. Stir ingredients and allow to simmer over medium-low for several minutes. Pour in the broth and stir well to combine.
When ready to bake, preheat the oven to 350℉. Butter a large baking dish, about 9×13″. Place the dried out bread cubes in a large mixing bowl and pour the sauce overtop. Stir well to combine and allow to sit for a few minutes to absorb the sauce. If there is too much sauce, pour a little off.
Pour the stuffing mixture into the baking dish and cover with unbleached parchment paper or a silicone mat. Bake for 45 minutes covered, then remove the cover for the remaining 15 minutes. If you want a little more crisp or browning, increase the temp to 450℉ and allow to bake for several more minutes. Watch closely so that it doesn’t burn.
Save time by making stuffing ahead of time. You can dry out the bread cubes days in advance and store in an airtight container. Additionally, you can make the sauce a day or two in advance and store in the fridge until ready to bake. When it’s time to bake on the day of, assemble the stuffing as noted in step 3,
