This sloppy Joe recipe is very easy, quick to throw together, and can be served solo in a bowl for a keto-friendly, high protein meal or the traditional way inside a hamburger bun.
Add chopped onion to a large skillet or pot with cooking fat and cook over medium heat, stirring frequently, until onion has softened and become more opaque. Add garlic in after cooking onion for a few minutes. Add the ground beef and combine with the onion and garlic until beef is cooked and no longer red. While cooking the beef, use a spatula or wooden spoon to break up the ground beef into small pieces. Stir frequently.
When beef is cooked through, add the tomato paste, ketchup, Worcestershire sauce, basil, Chile powder, salt and pepper. Combine well and bring to a boil. Place a lid overtop and turn heat down to a low simmer and allow the sloppy joes to cook for 20 minutes so that flavors can come together. After 20 minutes or so, remove the lid and give it a good stir. If you’re not ready to serve yet, you can continue to cook on low (with the lid on) as this will only improve the strength of the flavor.
When ready to serve, scoop the sloppy joes into a small bowl for a keto-friendly, high protein meal. You can also serve the traditional way on top of a good ingredient hamburger bun like these sourdough brioche buns made with einkorn
This recipe makes a hefty pot of sloppy joes, which is great for leftovers. Serve leftovers in a lunchbox as the protein, overtop a salad for lunch or dinner, or paired with some sauerkraut and a vegetable for a quick, nutrient dense meal.
