Directions

Step 1

Place whole chicken in a cast iron pan. Season chicken with a hearty amount of salt all over and under. Add freshly ground pepper to the entire bird. Stuff with Rosemary and lemon half. Drizzle with melted butter.

Step 2

Surround the chicken with remaining lemon halves and garlic heads – cut sides face down.

Step 3

Bake for 1 hour min at 375 F oven. Turn temperature up to 425F and bake for another 15-20 minutes until golden and crispy. Remove chicken and let rest 15 min before diving in.
