Directions

Step 1

Pour the oil in the jars into a small bowl and place the tuna fillets into a large mixing bowl. Mash the tuna with a fork into smaller pieces. Add all remaining ingredients to the bowl, but hold off on the parsley, salt and pepper until later. Stir all ingredients together until combined. Set bowl aside.

Step 2

Make the mayonnaise. Carefully drop the egg yolks into a 4-cup mason jar. Then add the mustard. Pour the oil on top, then add the lemon juice and salt. Use a hand immersion blender to blend into mayonnaise. Place the immersion blender directly on top of the egg yolks and mustard and turn on. Do not move the blender until the mayonnaise has clearly emulsified and thickened. Continue blending until you have mayonnaise.

Step 3

Add the mayonnaise to the tuna salad and stir until well combined. Season to taste with salt and pepper. Garnish with the chopped parsley.

Tip

This will store in the fridge for a few days so that you have quick lunchbox food. Eat tuna salad in a bowl for a high protein meal or on top of toasted sourdough bread or with good ingredient crackers like homemade Ritz or cheezits.
