Place canned sardines in a bowl. Discard the oil leftover in cans. Mash the fish and bones with a fork until fine and all bones are fully mashed.
Add carrots, onion, tomato, and parsley or cilantro to the bowl and mix well. Add vinegar, salt and pepper to taste, and if the salad needs more olive oil, pour a little bit in. Taste to see if it’s to your liking.
Garnish with Tabasco or crushed red pepper flakes.
