Our make ahead turkey gravy recipe is such a simple thing to make and takes only 10 minutes to make! Yet, homemade gravy can go oh-so-wrong! Doesn’t thicken, too much flour, takes forever…there’s so many things that can go wrong! We’re here to share our foolproof turkey gravy recipe, which we recommend making ahead, to save you time and stress when it’s crunch time on Thanksgiving. Turkey drippings are optional, but highly recommended!
In a small-medium sized pot, melt the butter over medium-high heat, then stir in the flour, and whisk into the simmering butter constantly until browning and thickened. If using a ceramic, nonstick pot, use a soft silicone spatula to stir constantly. This should take 2-3 minutes.
Gradually, drizzle in 2 cups chicken or turkey stock. The mixture should start to thicken. Over medium heat, continue to drizzle in remaining broth, while constantly stirring or whisking. Try to maintain a somewhat thicker consistency while drizzling the broth in. Allow to simmer for a few minutes if it becomes thin, in order to reduce and thicken up again, and then continue pouring the rest of broth in.
Make Ahead: once gravy is thickened, allow to cool and transfer to jars and store in refrigerator. You can also freeze. Just remember to thaw completely the day before and store in there fridge until ready to use
On the day of, finish the gravy. While turkey is resting, add the turkey drippings (fat, chunks and juices) to the warmed gravy and stir constantly over an active simmer. Season with salt and pepper to taste. If gravy is too thick, add a little water or reserved chicken stock. If too thin, simmer to reduce and thicken.
Gravy can be strained for a super smooth consistency, if desired.
Pour the hot gravy into gravy boat when ready to serve Thanksgiving meal.
Save time by making the gravy base one day or several days in advance. Follow steps 1 and 2. Finish the gravy on Thanksgiving Day when ready to add the drippings.
