Preheat oven to 450℉. Rinse salmon filet(s) in water, both flesh and skin side, then place on paper towels and pat dry.
In large baking dish, juice the lemons, and add the olive oil, several generous pinches of salt and cracked black pepper. Take the filet(s) and drench it in the marinade, both skin-side and flesh side. Place the filet, skin-side down and then sprinkle a bit more salt overtop the flesh.
Bake the salmon for 15 minutes at 450℉, then turn the oven to Broil at 500F for about 5 minutes. The salmon should change from pink on top to a beautiful golden color with crisp edges. This won’t take long, so make sure to keep an eye on this so not to burn the salmon.
Remove from oven and allow to rest for a few minutes. Take a spoon and scoop the flavorful juices and drizzle all over the salmon. Cut into the salmon when ready and serve immediately!
This meal feeds a lot of people and is quick and easy to throw together. Dinner ready in 30 minutes! Figure about 5-6 oz per person. Make a little extra for lunchbox or lunch the next day.
