Blend all ingredients in a food processor — you can leave some chunky pieces. Pour into popsicle molds and freeze for 8 hours or overnight until rock solid and firm.
When popsicles are firm, remove from freezer and allow them to soften for a few minutes to make removing from molds easier.
Melt chocolate dip ingredients together until smooth. Remove popsicles from their molds and dip into melted chocolate. Lay on parchment lined baking sheet until set…won’t take long. Ready to re-freeze at this point in popsicles bags or enjoy immediately!
Prep time on day 1 is quick, just 10 minutes! Freeze overnight and then dip popsicles, when frozen, into chocolate melt – another 10 minutes. These are easy and fun to prepare.
