Pulse walnuts, dates and salt in food processor until thick and sticky. Add this to a parchment lined dish or small springform cake dish and use a spatula or hand to press into the dish. Set aside.
Whisk egg yolks in a small sauce pan. Whisk in milk. Sprinkle gelatin on top. Warm milk, eggs, and gelatin over medium heat until just warm to the touch, then whisk constantly until gelatin is absorbed and free of clumps. Do not heat past a baby’s bottle temperature.
Add yogurt cream cheese to food processor and allow to blend until creamy and thick. While running, pour in the milk and egg mixture, honey, vanilla and salt. Allow to run until thick and creamy.
Pour filling into prepared crust dish. Shake a little bit back and forth to smooth out the top of filling. Garnish with berries or fruits if desired. Place in the refrigerator for several hours (at least 4 hours) to firm up.
This is a high protein, probiotic dessert you can store in the fridge all week. Makes a healthy lunchbox dessert addition too!
