The most delicious beef meatballs and packed with nutrients. Similar to Mexican albondigas, this recipe leaves no trace of hidden liver (gasp!) – only tender beef and mouthwatering flavor. Serve the family these quick and easy, protein-rich meatballs in their flavorful broth or over einkorn pasta with your favorite sauce. Makes great leftovers.
The most delicious beef meatballs and packed with nutrients. Similar to Mexican albondigas, this recipe leaves no trace of hidden liver (gasp!) – only tender beef and mouthwatering flavor. Serve the family these quick and easy, protein-rich meatballs in their flavorful broth or over einkorn pasta with your favorite sauce. Makes great leftovers.
Use a food processor to purée the beef liver or finely chop it with a sharp knife.
Mix all meatball ingredients together in a ceramic mixing bowl by massaging with your hand.
Meanwhile, heat broth in a dutch oven or large stockpot until boiling and season with salt. Add in the tomato puree.
Roll the meat into meatballs between your hands and carefully place each ball into the simmering broth. Turn heat down to low and let simmer with the lid on for 20 minutes (or longer) so that meatballs are fully cooked.
Serve a few meatballs in bowl with meat broth for a high protein, gelatinous-rich meal, or serve atop einkorn pasta or homemade salad. Enjoy!
Meatballs make a great lunchbox addition. Just refrigerate leftover meatballs and place 1 or two cold meatballs in lunchbox. Protein-rich lunch!
