Preheat oven to 400℉. Rinse cod filets in with water, then place on paper towels and pat dry.
In a large baking dish, add the coconut milk. Grate the peel of 1 lemon and then juice it. Add to the baking dish. Add all remaining ingredients to baking dish, except the broccoli. Stir well until all ingredients are fully combined. Take the filets and drench them in the sauce, flipping to both sides to make sure they’re fully coated. Place the broccoli pieces on top and then use a spoon to cover the broccoli with the coconut sauce.
Bake the code for 25-30 minutes at 400℉, then turn the oven to Broil at 500℉ for no more than 5 minutes. This will add a little bit of char and crisp to the broccoli.
Remove from oven. Use a large spoon server or spatula to dish up a piece of cod with broccoli into a bowl, then continue to add more broth to the bowl.
Best eaten immediately while hot. Serve in a bowl and enjoy with a spoon, so you can savor the delicious and flavorful coconut curry broth.. You’ll also want a fork and knife for the broccoli.
