We use simple, real food ingredients − the stars are raw cream and raw pasture raised egg yolks − and then lightly sweeten with an unrefined sweetener like maple syrup, raw honey, or coconut sugar. Skip the store-bought ice cream that’s loaded with sugar and really weird ingredients and make your own in under 30 minutes.

Directions

Step 1

Whisk the egg yolks a medium sized bowl. Add the powdered coconut sugar or drizzle in the maple syrup or raw honey, whisking while drizzling in. Add vanilla, and a pinch of salt, then drizzle in the cream while whisking constantly.

Step 2

Pour cream mixture into a churning ice cream maker and churn until thickened − about 20 minutes. Remove from maker and store in an ice cream container in the freezer. Will harden as it freezes longer. You can also enjoy right away as a softer ice cream.

Serving Tip

If ice cream is fully frozen, leave on counter for 5-10 minutes to soften up before scooping.
