Directions

Step 1

In a small saucepan, bring water to a boil. Turn heat off once it comes to a boil. Meanwhile, in a medium sized bowl, sprinkle gelatin on top of the lemon juice. Allow to bloom for 5-10 minutes. Gelatin will soak up the moisture, so you shouldn’t see the dried powder after blooming.

Step 2

Add the bloomed lemon juice to the water and stir over very low heat until all clumps are gone. Remove from heat and stir in the maple syrup. Allow to cool before adding to the gummy molds.

Step 3

Place your fruit snack molds or gummy molds on a baking sheet or two. Use gummy droppers (these come with certain molds) to precisely pour the liquid into each mold. If you don’t have a drop, you can carefully pour. Use a bread scraper or knife to even out the top of each mold before placing into refrigerator. Note: if you don’t have molds, pour mixture into a medium sized baking dish lined with unbleached parchment paper and place in the fridge until firm. You’ll just need to cut into small squares when it’s set.

Step 4

Once firm, remove the molds from the refrigerator and place in a glass or non-toxic storage container. Store in the fridge.

Tip #1

These are collagen-rich snacks that make perfect after-school snack or lunchbox additions. They will not be as firm as a storebought fruit snack or gummy, but that’s because there’s no trashy ingredients in them. Kid’s love them!

Tip #2

To give them more hue, you can add a little bit of turmeric, which is how I got this orange color. Just add a little, so the turmeric flavor is not noticed.
