These stuffed peppers are packed with protein from grass fed ground beef. With just 15 minutes prep time, these ground beef stuffed peppers make a great weeknight dinner for the family, with leftovers for school lunchbox.
In a large pan over medium heat, begin to sauté the chopped onion along with cooking fat. Move the onions around with a spatula to prevent burning. Add the chopped carrot. When onion begins to turn a little translucent and carrots have softened a bit, add the garlic, ground beef, paprika, salt and tomato sauce (if using). With spatula, breakup the ground beef and mix with all ingredients together. Allow to cook over medium heat for several minutes until the meat is cooked through. Add additional salt or seasonings, if necessary.
Preheat oven to 375℉. While the beef is cooking on the stove, prepare the peppers by cutting off the tops and removing the seeds from the inside. The peppers should be hollow. Place peppers into a baking dish.
Use a spoon to scoop meat into each pepper, filling each pepper to the top. Bake for 25-30 minutes, then add shredded cheese to the top and bake another 5 minutes to allow the cheese to melt. You can add the cheese at the beginning as well, it will just be crispier than if you add at the end. Garnish with chopped cilantro or parsley. Serve immediately!
This recipe makes about 8 stuffed peppers, which make great leftovers and lunchbox additions. Simply slice cold pepper in half, from top to bottom, and add one half to the lunchbox or both halves to the box.
