Smooth and creamy, these festive pumpkin pie popsicles are perfect for afterschool snack or a fun treat any day of the week. They’re made with probiotic yogurt cream cheese, something you can easily do by straining plain yogurt with a strainer and cheesecloth. You can also use plain greek yogurt and these take 5 minutes to whip up. They freeze overnight!

Ingredients

Yield: 9 popsicles

Directions

Step 1

Blend all ingredients in a food processor. Scrape down with a silicone spatula, then blend again until smooth. Pour into popsicle molds and freeze for 8 hours or overnight until rock solid and firm.

Step 2

When popsicles are firm, remove from freezer and allow them to soften for a few minutes to make removing from molds easier. Store in individual popsicle bags in the freezer.

Note

Prep time is quick, just 5 minutes! Freeze overnight and that’s all there is to it. Popsicles are ready to eat when fully frozen and firm.

How To: Yogurt Cream Cheese

Place plain yogurt in a cheesecloth over a fine mesh strainer and large bowl for 1 day in the refrigerator so that the whey can drip out. Use a spoon to stir it a few times if need be. Once it has been strained, you can take the thick yogurt on top and blend it in the food processor to get a cream cheese consistency.
