Directions

Step 1

Preheat oven to 375℉. If using freshly milled flour, sift it using a fine mesh strainer over a bowl and discard remaining bran or throw to your chickens. If using whole wheat flour, there is no need too sift.  Whisk together flour and remaining dry ingredients in a large mixing bowl.

Step 2

Using a stand mixer or hand mixer, combine melted butter and coconut sugar until well combined. One by one, add yolk, eggs, honey and vanilla while the mixer is running until well combined, smooth and creamy.

Step 3

While the mixer is on low, add dry ingredients and stop mixing right when dry mix is combined, as you don’t want to over-mix.

Step 4

Add chocolate chips and run the mixer for a few seconds. Use your hand to knead the dough to fully integrate the chocolate chips if need be.

Step 5

Use a heaping tablespoon or cookie scoop to drop cookies onto a cookie sheet lined with unbleached parchment paper. Add additional chocolate chips to the top if cookie balls need them.

Step 6

Bake for approximately 8-12 minutes, depending on how big cookies are. Pull cookies out when they look almost cooked as they will continue to cook when you pull them out. Place them on cooling rack once they have been sitting out for 10+ minutes and are firm enough to transfer. Once chocolate is set, transfer to a cookie jar.

Tip

Do not overbake as cookies will lose chewiness and become dry and hard. Cookies should be soft when you take them out and will firm up as they cool.
