It’s time to learn how to cook delicious beans because legumes are one of the most powerful foods you can add to your diet. Beans act as a prebiotic, feeding beneficial gut bacteria and supporting strains like Akkermansia and Faecalibacterium. They’re incredibly affordable, too. When properly prepared, beans not only taste delicious, they’re also much easier to digest. I like to cook mine in homemade chicken broth to boost flavor and add extra minerals and amino acids. Adding seaweed like kelp or kombu is another simple step that enhances mineral content, especially iodine.

Directions

Step 1

Add dried beans to a large bowl and fill with filtered water so that beans are covered by at least 2-3″ of water. Add vinegar. Give it a good stir and allow to soak at room temperature for approximately one day. If beans soak up the water, add more to allow beans to become fully hydrated.

Step 2

When ready to cook, transfer the soaked beans to a strainer or colander and rinse very well with water. Set aside. In a medium-large pot, sauté onion and garlic with olive oil or tallow over medium-low heat until slightly transparent and softened. Add the rinsed beans and broth to the pot. Cut the kelp into small pieces and add to the pot. Bring to a boil. When boiling, turn heat down to a simmer, place the lid on pot and allow to cook for approximately 40 minutes. Add more broth/water if needed.

Step 3

Beans are ready when they are soft to chew, not stiff or hard. Can continue to simmer over very low heat with the lid on once beans are cooked. Season the beans with salt (to taste) after done cooking.

Serving Suggestion

Beans can be served as a side to a meal. Garnish with cilantro, olive oil, and a pinch of salt.

Storing Beans

Store beans in an airtight glass container. Warm on the stove in a small pot and add water if necessary.
