This fully loaded coleslaw packs a nutritional punch with a variety of colorful veggies, herbs, and red onions. Make a big batch and store leftovers all week long. Use coleslaw as a side dish for dinner, to top tacos, or as a layer inside of this zucchini lasagna.
Slice the zucchinis in half lengthwise. Use a mandoline to slice zucchini thin, shaving on the short side so you get small pieces, not long pieces. Place zucchini slices in a bowl. Use the mandoline to shred the cabbage and onion so that you have fine pieces and then add to bowl. Add chopped tomatoes, parsley, and basil to the bowl.
Mix dressing ingredients in a Nutri bullet. You should get a thick and creamy dressing. If it’s too thick, thin it out with a little bit of apple cider vinegar, then run the blender again.
Toss salad with dressing. Shave parmesan using a cheese slicer on top of the salad.
