Place potato cubes into a large pot and cover with water. Add several generous pinches of salt to the water and bring to a boil. Allow to simmer for approximately 15 minutes until a fork can easily pierce the potato. Strain the water from the potatoes.
Place the potatoes, butter, cream cheese, sour cream, and several pinches of salt into the bowl of your stand mixer. Turn to low and allow to run for a few seconds, then stop the machine to scrape down, and allow to run again for several seconds. Repeat this process several more times until the potatoes are mixes and broken down. Do not turn on to a high speed and do not allow to run for more than 60 seconds at a time to avoid overusing the potato as this will cause sticky and chewy potatoes.
Taste the potatoes and adjust with more salt if necessary. If potatoes seem they may be too dry, add a little bit of warm milk or cream and mix for several seconds.
When plated and ready to serve, pour melted butter overtop for a nice presentation and lightly sprinkle with salt.
If mashed potatoes are made in advance, reheat on stovetop and add a little bit of milk, stirring frequently to avoid sticking and burning. When hot, remove from pot, plate again, and drizzle melted butter overtop or just put a cube of butter onto the hot mashed potatoes and it will melt on its own.
If potatoes seem dry, add warm milk or cream.
