There’s a health food restaurant in our town that makes these gluten free cookies with oats, banana, and chocolate chips. They’re super large and pretty expensive, but we love them! We set it as a goal to make our own banana oat chocolate chip cookie version and we succeeded big time.
There’s a health food restaurant in our town that makes these gluten free cookies with oats, banana, and chocolate chips. They’re super large and pretty expensive, but we love them! We set it as a goal to make our own banana oat chocolate chip cookie version and we succeeded big time.
Preheat oven to 350℉. In a large bowl, mash the bananas with a masher or fork. Add remaining wet ingredients and whisk until well combined. Add dry ingredinets into the bowl and mix combined.
Using a large cookie scoop, scoop the batter and place onto cookie sheet lined with parchment paper. Flatten each cookie with the bottom of a 1 cup measuring cup. It may stick a little, so work fast and don’t worry. Bake for 20 minutes. Remove from oven and let cool overnight until firm.
These cookies store well in a glass jar on the counter, but they won’t last long with hungry bellies around. They’re perfect as a lunchbox addition, a quick breakfast, or snack!
