It’s hard to find healthy protein bars at the grocery with good ingredients, really hard! So, we made these homemade protein bars, which are inspired by the Perfect Bar. They’re made with quality ingredients, low in unrefined sweetener (we used raw honey), and packed with protein. This healthy protein bar recipe makes a batch of 15 protein bars, so you’ll have quick snacks ready to go all week long!

Directions

Step 1

Mix the wet ingredients in a medium-large bowl including nut butter, honey, and coconut oil. Add the dry ingredinets, except the chocolate chips, and stir to combine well so that you get a dough.

Step 2

Line a small baking sheet with parchment paper and place the dough on top. Flatten the dough to make a square about ½” thick. You can use a large knife and pressed these of the knife against the edges of the shape to help make a better square. Cover the top with chopped chocolate chunks, then place in the refrigerator for 1 hour or longer until firm.

Step 3

Remove from fridge and transfer the parchment paper to a cutting board. Cut the protein square into even 15 pieces. Wrap each piece in a small piece of parchment paper and then store protein bars in a glass storage container in the refrigerator.

Note

Keep protein bars stored in refrigerator so they stay firm. When removed from fridge, they will soften up, but should be fine if you add one to the lunchbox in the parchment paper. Protein bars have a long shelf life when stored in the fridge.

Note #2

Depending on how sweet your protein powder is, you may not want to use any additional sweetener. Likewise, if your protein powder is not sweet, you may want to add more honey than the recipe calls for to the dough.
