Salad dressing is one of those things we should always make from scratch. With just 3 simple ingredients, this quick and easy vinaigrette salad dressing transforms a simple salad. But guess what. Add lemon juice or vinegar, mustard, and salt to a small bowl. Mix together with a whisk or fork. Begin to drizzle in the olive oil, while whisking constantly. Allow the dressing to emulsify before adding more oil, then continue to drizzle the oil in. Continue to whisk until the oil has clearly emulsified with the vinegar and the dressing looks like one. You shouldn’t be able to see the vinegar separated from the olive oil.
Taste the dressing. If it tastes how you like it, great! It should taste strong. Add more salt if necessary. If it’s too tangy, add more olive oil. If it needs more bite, add more lemon juice or vinegar.
You can add ½ garlic clove, mashed with a garlic press, and 1-2 tsp raw honey. This elevates the dressing any day!
If you want a creamier dressing, use a Nutri bullet or small blender to blend all ingredients. You’ll have a light yellow, creamy dressing that tastes delicious!
