Process all nugget ingredients in a food processor until finely chopped, but be careful not to overprocess into a purée.
Make little nuggets with your hands and place them on a baking sheet lined with unbleached parchment paper. Put in the freezer while you prepare the nugget batter.
Combine all batter ingredients in a ceramic mixing bowl. You want the batter to be on the thinner side.
Heat your cast iron skillet on medium heat and add in a good amount of schmaltz, tallow, avocado oil, or coconut oil.
Dunk the nuggets in the batter and fry over medium heat for about 5 minutes on each side until crispy and the chicken is fully cooked.
Remove nuggets from the skillet and place onto a cooling rack. Let the remaining oil drip off or place the nuggets onto a paper towel.
Serve piping hot with your favorite sauces like ketchup, bbq, honey mustard, or homemade ranch. Enjoy!
These store well in glass containers in the fridge. Reheat in the oven at 350F to crisp up. You can also freeze them after cooking on a baking sheet and transfer them to freezer bags when fully frozen to have on hand whenever you need them.
