Did you ever think you could have chicken with peaches? Oh, but there’s nothing like peach chicken! Tender chicken baked in an infused peach broth that can be drizzled over the chicken as gravy when you serve dinner. A fabulous way to use up ripe peaches and even peaches that you’ve frozen for storage from your tree.

A fabulous way to use up ripe peaches and even peaches that you’ve frozen for storage from your tree.
Combine all ingredients except for the chicken, peaches, and basil into a casserole baking dish and mix well to create a marinade for the chicken.
Add chicken pieces to the marinade and move them all around until they’re covered in the marinade. Lastly, cover the chicken with peach chunks. Let marinate in the fridge for a few hours if you have the time.
Bake at 375F for 35 min, then stir everything around to coat all pieces in the juice. Increase temperature to 425F for 30 minutes. Lastly, increase temperature to 450F-475F for another 7-10 minutes to brown and crisp the chicken. Remove from oven and let rest.
Ladle the juices over the chicken and garnish with fresh basil. Serve and enjoy immediately.
This is a fabulous way to use frozen peaches that you have stored in the freezer. And if you want to get really fancy, you could serve peach upside down cake for dessert.
