Directions

Step 1

Make the cake batter. Preheat oven to 350°F. Line a 9×13 baking pan with parchment paper. In a large bowl, whisk together the melted butter, coconut sugar, and maple syrup, and eggs. Add vanilla and milk. Whisk until smooth.

Step 2

In a separate bowl, sift in flour, baking powder, and fine salt. Pour egg mixture into the flour and begin to fold with a spatula until just combined. Do not overmix. Let batter rest for 5 minutes. Pour into prepared pan and smooth the top with spatula. Bake for 30 minutes or until a knife inserted into the center comes out clean. Remove the cake from the baking dish by lifting the parchment paper out and transfer to a cooling rack. Cool completely before assembling.

Step 3

Meanwhile, make the frosting. Using a stand mixer, beat cream cheese and butter until smooth and fluffy – 2 minutes. Add powdered sugar, vanilla and salt and beat until light and creamy, scraping down sides when needed. Set aside until the cake is room temperature and ready to be assembled.

Step 4

Assembly. Use a small round cutter to cut circles from the cooled cake. Place one cake round in the bottom of each dessert cup (I used these cups), then a thin layer of frosting, another cake round, and another layer of frosting. Frost the top smoothly. Continue to do this with all of the dessert cups, using the cake scraps to make even layers as you go. Dunk quickly into the dots, then place into the fridge. Enjoy when the cake top is hardened and you can tap the top with a spoon!
