Directions

Step 1

Preheat oven to 350℉. Using a stand mixer, beat eggs with the whisk attachment on medium speed. While the mixer is running, add the coconut sugar gradually. Add baking powder and salt. Allow mixer to run on medium-high speed until mixture is pale and thick. Slowly drizzle in butter at medium-high speed, then add vanilla. While the mixer is running or slow speed, gradually add the sifted einkorn flour and allow mixer to run until just incorporated. Do not over-mix.

Step 2

Line a 9″x13″baking sheet or baking dish with parchment paper. Pour the cake batter into the baking dish and spread evenly with a spatula. The larger the baking sheet or baking dish you use, the thinner the cake will be. Bake at 350℉ for 15-18 minutes until golden on top and until a knife inserted into center of cake comes out clean. Baking time may increase if baking dish is deeper or smaller. Remove cake from oven and allow to cool. Transfer to a cooling rack when cake is firm enough to transfer.

Step 3

While cake bakes, make the cream cheese frosting. Using your stand mixer and the paddle attachment, beat butter and cream cheese until fluffy. Scrape down as needed with a spatula. Add remaining ingredients and beat several minutes until soft and fluffy. When cake is at room temperature, spread frosting over the entire cake. Decorate the top of cake to mimic The American Flag using blueberries and raspberries.
