Using a food processor, blend flour and salt. Next, add butter, then grated cheese. While the food processor is running, add 1 tsp of water and run blade until dough forms. Add another teaspoon if dough doesn’t form. Stop immediately when dough forms and do not add any more water. Turn off processor.
Place dough onto a floured surface and roll out using a rolling pin to about ¼” thick. Flour the dough to prevent sticking and continue to rotate the dough on counter to prevent sticking.
Use a goldfish cutter to make goldfish crackers or you can just cut into square crackers using a pizza cutter if you don’t have molds. Take excess dough and continue to roll out until you no longer have any excess dough left. Place goldfish crackers onto a baking sheet lined with unbleached parchment paper and bake at 350℉ for 15 minutes or until slightly golden.
Remove from oven and let cool on a cooling rack. Crackers will harden as they cool. Transfer to a glass jar when cooled and store in the pantry.
These are a kid favorite, so you may want to double the batch, as they go quickly! Perfect for lunchbox.
