Today, February 4, 2013 is National Homemade Soup Day, which just so happens to fall during Heart Health Month. For National Homemade Soup Day, you can get cozy this evening and make your favorite hot soup. A fun way to decorate a soup is to add a Parmesan crisp, which will float on top. Parmesan crisps are ideal with broth based soups like chicken noodle or tomato soups. Below, we show how to make the very simple Parmesan Crisp recipe in just 5 easy steps.

Ingredients:
1 cup shredded Parmesan
A handful of fresh herbs (optional)
How To Make Parmesan Crisps For Soup Topping Decoration
1. Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper. Grate Parmesan cheese with large hole grater.
2. Place about 2 tablespoons of the cheese into a circular shape on the parchment paper. Make the circle as large as you want the crisp to be or about 4 inches. You can use a cookie cutter if you want a more perfect shape. Repeat until you have filled the sheet with the mounds of cheese at least 1.2 inch between each pile.
3. Add a little pinch of black pepper on top of each one. Add herbs such as Rosemary if you want.
4. Bake for about 7 minutes, just until set and before they start to turn golden.
5. Remove from oven, let cool on pan for a few minutes. They will firm up as they cool. Gently lift off with a spatula.
Storage: these can be made a couple of days ahead and stored in an airtight container. Layer crisps with wax paper.
