These adorable homemade animal crackers are an up-leveled version of traditional animal crackers. Not only are they free of seed oils, enriched flour, food dyes and artificial flavors, they are much lower in unrefined sugar too. Whip up a batch of these for your kids’ lunchboxes or a mom-approved after-school treat they will look forward to.

Directions

Step 1

Whisk together flour, baking powder, and salt in a ceramic mixing bowl.

Step 2

With a stand mixer, cream the butter for a few minutes until it’s fluffy. Then, gradually add the sucanat or coconut sugar.

Step 3

Beat in the egg and vanilla extract until well combined – it should be fluffy and thick. Gradually add the flour mixture to the wet ingredients, mixing on low speed until a dough forms.

Step 4

Shape the dough into a disc, wrap it in compostable plastic wrap, and refrigerate until more firm (30 minutes to 1 hour).

Step 5

Roll out the chilled dough on a floured surface to about ¼-inch thickness. Use animal-shaped cookie cutters to cut out cookies from the rolled dough. Place the cookies onto a baking sheet lined with unbleached parchment paper.

Step 6

Bake the cookies at 350F for about 10 minutes. Remove cookies and place them on cooling racks until they are ready to transfer to a cookie jar.
